Harvest Muffins

Harvest Muffins

Makes: 12 medium muffins
Prep Time: 20 minutes
Cook Time: 20 minutes

 

Ingredients:

  • 1 cup almond meal (or gluten free flour mixture)
  • 1 cup ground flax seeds or flax meal, divided
  • 9 Tbsp hot water
  • ¼ tsp baking soda
  • 1 ¼ tsp baking powder
  • 1 tsp salt
  • ½ Tbsp cinnamon
  • ½ tsp ginger powder
  • 1/2 cup maple syrup or honey
  • ¼ cup applesauce
  • ¼ cup melted coconut oil
  • 1 tsp vanilla
  • ½ cup almond milk
  • 1 Tbsp cider vinegar
  • 1 Gala apple, diced
  • 1 cup pecans, chopped
  • ½ cup raisins

 

Preparation:

  1. Measure out 1 cup ground flax meal, scoop out 3 Tbsp and set aside. Mix together dry ingredients in a bowl, excluding the 3 Tbsp flax meal.
  2. Whisk the 3 Tbsp of flax meal with 9 Tbsp hot water into a slurry.
  3. In a separate bowl, combine wet ingredients with the flax meal slurry and whisk together. Add wet ingredients to dry, and stir until mixture is smooth. Add pecans, apple and raisins if desired. Stir until all are evenly distributed.
  4. Line a muffin tray with muffin papers, and evenly distribute the batter into 12 muffin papers. Bake at 350°F for 20 minutes or until a toothpick inserted in the center comes out dry. Makes 12 medium muffins.
