Cucumber Salad

Garden Cucumber Salad

Serves: 6
Prep Time: 20 minutes



  • 4 cups diced cucumbers
  • 1 cup grape tomatoes, halved
  • ¾ cup kalamata olives, halved
  • ½ green bell pepper, diced
  • ¼ cup chopped red onion
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried dill
  • ½ teaspoon garlic powder
  • Pinch of salt



1. In a small bowl, combine olive oil, dill, garlic powder and salt. Whisk or stir together well.

2. Combine cucumbers, tomatoes, olives, peppers and onions in a mixing bowl or serving bowl. Drizzle olive oil mixture over the vegetables and toss to coat. Serve chilled with Pan-Fried Chicken Tenders
